Here is a recipe for an octopus salad, in which the most beautiful of the seafood adorns the tables… Octopus, which is poor in saturated fatty acids, is a very good source of copper, phosphorus, protein, and zinc. Vitamin B12, the deficiency of which is observed in heart palpitations, depression, and disorders of the nervous system, is abundant in octopus.
750 grams octopus
4-5 strings of Italian parsley
4 bay leaves
4 strings of dill
1 tbsp sugar
4 cloves of garlic
½ cup grape vinegar
2 tbsp olive oil
2 liters water
Put the octopus in 2 liters of water in a mid-sized pot.
Add onion, lemon, parsley, bay leaves, vinegar, garlic, and sugar, and simmer for 1,5 hours.
Take the octopus out of the pot and hold it under cold water until it cools down.
When it’s cold enough to hold, remove the shell and the head and clean thoroughly.
Cut the octopus into bite-sized pieces, mix with chopped dill, drizzle with olive oil and serve with lemon, parsley, and sliced carrots.
