2 tbsp olive oil
3 green hot peppers
1 tsp salt
In a 2” deep frying pan put olive oil and, the green peppers you cleaned off their seeds and stems, and stir until the peppers begin to change color.
Peel the tomatoes, dice, and add to the frying peppers.
On low heat, close the lid and wait until the tomatoes are fully cooked. If the tomatoes are not juicy enough and stick to the pan, you may add a little bit of boiling water.
Add the eggs to the pan and stir until they blend. Add salt and spices to your taste. Black pepper is a popular one in this dish.
When the eggs are cooked, garnish with chili flakes and/or parsley. Serve hot.
