250 gr ground beef
1 egg white
1 full tbsp of flour
1 tbsp fine bulgur
1 medium-sized onion
1 clove garlic
½ tbsp dried basil

3 cups of yogurt
2 tbsp flour
1 egg yolk
7-8 cups of cold water
1 cup cooked chickpeas
1 tbsp butter
1 tsp peppermint


Grate the onion and garlic.

In a mixing bowl, knead ground beef, grated onion and garlic, egg white (do not discard the yolk, you’re going to need it for the soup later), flour, bulgur, and basil for 10 minutes.

Grease your hands with oil and take marble-sized pieces from the mixture. Make little meatballs by rolling them between your palms.

Place them on a plate and leave them in the fridge to rest.

Put all the ingredients under the “soup” list except the chickpeas in a pot. Make sure you stir fast enough so the flour doesn’t clump. You could use a hand mixer for this step.

Bring the soup to a boil and keep stirring at the same time.

Add the chickpeas and the meatballs to the soup.

Let it simmer for 15 minutes or until the meatballs are cooked.

Melt butter in a separate saucepan and add peppermint. Drizzle it on your soup and serve.

You may omit the chickpeas if you don’t like them.
