1 kg boned lamb shoulder (you can add neck as well)
2 tbsp butter
1 cup of rice
8-10 cloves of garlic
½ tbsp pepper paste
Paprika, and black pepper to taste
8 cups of lamb broth
Boil the meat in a pressure cooker.
Drain the meat after it’s cooked but don’t discard the broth.
Separate the bones and cut the meat into small pieces.
Pour the broth into a mid-sized pot and cook the rice in it.
When the rice is soft enough to eat, add pepper paste, butter, salt, spices, and crushed garlic. Stir well.
Add the meat into the rice-broth mix and let it simmer for a while. Then set aside.
If you wish, add melted butter and chopped parsley to your soup, and serve with a piece of lemon on the side.
