Ingredients

8 extracted artichokes
1/2 cup of olive oil
1 onion
1 potato
1 carrot
1 cup of pea beans
2 fresh lemon juice
1 cup of water
½ tbsp sugar
1 tbsp salt
Dill to taste

Instructions

Put the diced carrots, diced pea beans, and diced potatoes in a large pot and cook on low heat until they are soft.

Put olive oil in a large pot and add the diced onions. Cook, stirring occasionally until onions are translucent, about 5 minutes. Then add the carrots, pea beans, and potatoes. Stir for 5 minutes and set aside.

For the sauce; add 2 lemon juice, a cup of water, sugar, salt, and 2 tbsp olive oil then mix and set aside.

Put the artichokes in a large pot and add the garnish that you have prepared to it. Then add the sauce and cook on low heat for 30-45 minutes.

You can serve as hot or cold. Enjoy!

Tips: For the artichoke not to lose its nutritional value, you should do the cleaning and peeling procedures immediately before cooking your dish. Cut the blackened hard leaves of the artichoke in the head part from the place closest to the fleshy part, but not transversely, so as not to touch the fleshy part.
